Deep-skinning machine removes the skin together with fatty layer between the skin and the muscular tissue by means of an oscillating blade; the thickness of cut is adjustable. This method is used salmon, saithe, merluza, Alaska pollack, etc.
This machine processes gutted and headed fish with or without collar bone. It can be equipped for salmon, trout, tuna, whitefish. The fish are fed through the tools in such manner that the fillets does not get any stress - it is a prerequisite for a smooth surface of the cut. The salmon version produces both fillets with and without collar bone, and after adaptation, salmon sides on which the rib bones are retained.
